Queen of Chickens

On my birthday, I cooked me very first whole chicken. And I did it in the crock pot. I am Working Woman, Hear Me Roar!

I confess to being somewhat intimidated by whole chickens. The size, the bones, the giblets (shudder). But I read a recipe on a fabulous blog – The Happy Housewife — about how you can cook a whole roasting chicken in a crock pot, and I was intrigued.

By gum it’s totally easy. I bought a smallish chicken, gingerly yanked out (and threw away) the bag of nasty innards, stuck an apple up its butt and popped the whole thing in the crock pot. Sprinkle on a few spices, turn it on low, and walk away for seven hours.

Voila! Succulent bird morsels await. Seriously, the meat fell off the bone and it was delicious. It also yielded sufficient extra meat for a nice soup this weekend. I’m currently cooking the bones and extras in the crock pot over night in order to yield a nice supply of stock (also a suggestion of The Housewife).
