We Heart Vegetables

A dear friend sent a very funny email to me in response to my post about the weekly menu:

“Speaking on behalf of the plant kingdom, I am beginning to feel like a stepchild!! Can I put in a plea for them? I am sure Michelle would too…… Otherwise your plan looks great! (Plus they will help with the loathed double chins and help uncover the hidden sylph.)”

Fear not, plant-loving readers. I actually do serve produce to my family daily — it just doesn’t look that way on the meal plan because I rarely plan my veggie sides. I just add whatever I have on hand. But my mother instilled in me a deep sense that dinner is not complete without a vegetable or fruit.

Miss Mouse, bless her heart, is a great veggie eater. (Better than her father!) And, although Manwich proudly touts that it includes a full serving of vegetables, we don’t count that! Members of the plant kingdom accounted for among this week’s dinners included:

Steamed broccoli
Blueberries
Applesauce
Carrots
Peas
Stir-fried bell peppers
Green salad (with craisins, feta cheese, and walnuts. Oh my)

We’re not particularly adventurous (though I did just read a glowing review of artichokes that made me want to try my hand…) but we do manage to account for all our food groups at most meals.
