In which I (remarkably) plan ahead

I try to get out ahead of life when I can.  I (sometimes) pick an outfit for the next day before going to bed.  I (infrequently) pack my lunch in the evening.  And I (occasionally) dabble in freezer cooking.  I’m trying to be more intentional about that last one and have gotten pretty good about freezing single-serving portions of things like soup that I can then take in my lunch.

A few weeks ago, I had a surge of productivity and made a triple (yes, triple) recipe of a penne chicken casserole that’s a family favorite.  We ate one batch and I froze the other two.

This wasn’t a random act.  No, no. I had a plan.  A dear friend of mine was very pregnant at the time, and I always want to be “that person who brings over meals for new moms”…but I usually fail to be that person.  Thus I earmarked one of the casseroles for her.

The other casserole will debut tomorrow when we have friends coming over for dinner.  I pulled it out of the freezer tonight to defrost and can just pop it in the oven tomorrow evening.  Easy peasy.

Now I just need to get off my butt and take the other casserole to my friend and her lovely new son.  Before he starts walking…
