Simple Ham Soup (Recipe)

Inspired by a recent post on my favorite blog and by the many pounds of leftover Easter ham hanging out in my refrigerator, I made a mammoth batch of ham soup this week.  It wasn’t part of my meal plan.  It was destined for the freezer.  I threw the ingredients together one evening, let it cook in the crock pot over night, then promptly froze it in one-cup lunch portions for future meals.

This is a go-to recipe in my life and it never lets me down.  Cheap, easy, and remarkably healthy (it points at about 4 points per cup for anyone doing Weight Watchers).   Oh, and delicious!

Simple Ham Soup

2 cups cooked chopped ham
1/2 cup chopped onion
15 oz can of black beans, rinsed
15 oz can creamed corn
28 oz can diced tomatoes
Black pepper to taste

Mix it all together and cook in the crock pot about 7 hours on low.   Yup, that’s it.  I promise it’s fabulous.
