Cold Green Beans and Other Pre-Dinner Delights

I’ve noticed a strange mealtime phenomenon in my house. My children will eat vegetables before dinner, but usually not during dinner.
I’m not at all sure what this is about. I try to include a vegetable with most dinners, but often get only the obligatory “taste it” bite from my children. However, if I’m prepping vegetables in the kitchen before dinner, my kiddos will clamor for samples.
For some reason, I fought against this trend for a while. “No,” I would exclaim, “No more red pepper for you until dinner!” At which point, they’d ignore it.
Then I realized how dumb that was. Would I prefer that they eat their veggies while seated at the dinner table? Sure. But I’m embracing the pre-dinner window for vegetable consumption. Now, I keep a box of chopped bell peppers and sugar snap peas in the fridge. I pull it out and stick it on the counter while I’m making dinner and my munchkins can dig in at will. Last night, they downed an entire bell pepper and a goodly handful of snap peas before we got anywhere near the dinner table.
The other night, Buggie consumed about 3/4 of a cup of COLD left-over veggies (a medley of green beans, peas, and carrots) that was sitting out within his reach, waiting to be microwaved. And they weren’t even great when warm – it was canned green beans (ugh – hubs likes them) and frozen peas and carrots. Not exactly vegetable rock stars. I was somewhat appalled, but also thrilled.
I have no idea why vegetables are more appealing to my kids when eating sitting at the counter in our kitchen, but I’m not going to argue with it!
