Mango Coconut Granola (Recipe)

I’ve gotten onto a homemade granola kick lately. Little Bird and I spend a fair amount of time in the kitchen together because she loves being in her baby carrier…but only if I’m standing up. Luckily, cooking requires standing!
It’s champagne mango season and I took advantage of the bounty in our house to create a new granola recipe: Mango Coconut. Mmmm.
Mango Coconut Granola
2 cups old-fashioned oats
1/4 cup wheat germ
1 cup flaked coconut (I used sweetened)
1/4 tsp salt
1/4 cup brown sugar
1/4 cup Mango Sauce (see below)
3 T plus 2 tsp cooking oil
In a large bowl, combine the oats, wheat germ, coconut and salt.
In a separate medium bowl, combine brown sugar, mango sauce, and cooking oil.
Pour the sauce mixture onto the oats mixtures and use your hands to combine. Spread the mixture onto a parchment-lined baking sheet. Bake at 325 degrees for 30-35 minutes, stirring every 10 minutes. (Take it out after 30 minutes and let it cool. If it’s still too chewy for your liking, give it another five minutes).
Cool completely and enjoy!
3 champagne mangoes (or 2 regular mangoes), peeled and chopped
1/4 cup honey
2 T lime juice
Combine ingredients in food processor. This stuff is heavenly. It’s awesome on grilled seafood or chicken. If you’re doing main course, rather than granola, you can add a pinch of cayene pepper to give it a little kick.
