Let me start by saying that I know this isn’t Twitter. I am composing this missive in WordPress, a blogging platform. Therefore, the use of hashtags is admittedly #inappropriate. But I’m a huge fan of hashtags. I think they’re funny. And since I don’t use Twitter, I’ve given myself permission to utilize them sparingly in my blog.
Ahem. Moving on. Today I’m introducing two hashtags that I’ll be using during the Summer of Veggies. They are: #VeggieFail and #VeggieWin. I believe they’re self-explanatory.
I’ve got one of each today, both stemming (ha ha) from the same source: beets.
First, the bad news. I attempted to make roasted Beet Greens Chips, following a wildly popular recipe for Kale Chips. #VeggieFail. The darned things stuck to my pan, were mostly limp rather than crunchy, and had an unpleasant aftertaste. Sigh. I’ll try again with actual kale some time since I know lots of people who adore that recipe.
But the erstwhile beets redeemed themselves when I made Roasted Baby Beets. They were tiny little nuggets of crunchy goodness and a lovely addition to my lunch salad. #VeggieWin!
Speaking of my lunch salad, here it is:
All the main ingredients came from our CSA. Mixed greens, radishes, hard-boiled egg, and roasted baby beets. I felt so green!
Of course, I also felt hungry seconds after completing this virtuous meal and downed half a (mini) loaf of cinnamon bread a friend had brought over… #WhatCanYouDo
