CSA Week 3

June 5th, 2013

We’re into Week 3 of our CSA adventure.  It’s still very very green, but I’m gaining confidence in my ability to handle the verdant hue.

Week 3 with Words

More salad (surprise surprise), a big bag of kale, beets, radishes, and parsley.

Lots of salads this week, obviously.  I *finally* mastered the art of roasted kale chips and my mom and I put a serious dent in the bag of kale tonight.  I might make and freeze some Kale Sweet Potato Quesadillas if I wind up with excess.  The radishes will go in salads and probably a recipe my mom sent for green beans and radishes.  I’m not a huge parsley fan but I did use some tonight in a really lovely pasta dish (recipe forthcoming) and will probably throw it on some boiled potatoes with ham next week.

I have plans for the beets but am not going to share them just yet as I intend to sneak them in when my husband isn’t looking…

    I ate kale til it was coming out my ears when I was pregnant with my second daughter. I had a lot growing right off my patio and I wasn’t about to waste it. I just ate it as a tossed salad. I will say I lost a bunch of weight and looked really great after I had her. And she’s always been small. Wonder if there’s a connection?
    The kale chips do sound delicious, but I am certain with my very limited amount of garden space now that I would not grow it myself. I just found a local garden source for the kind of co-op type connection you have. I am excited!
