CSA Weeks 5 & 6

Egad.  I’m way behind on CSA pics!  Apologies.  I’ve been too busy eating kale to post.  But here are the pics of weeks five and six.  Tomorrow is the Week 7 pickup.

Week 5 with Words

Week 5 was our first with blueberries and they were so good we ate them all in the car on the way home…  There were also more carrots than the picture shows.  Miss Mouse did a number on them before I could take a picture!

Week 6 with Words

Week 6 brought the first squash and I’m bracing myself for an onslaught in the weeks ahead.  Zucchini is not my strong suit!

    In addition to zucchini bread/cake and zucchini shredded in orzo, this is my favorite zucchini recipe.

    Zucchini Slice Bake
    375 g (I’ve never actually measured, we use a lot) zucchini
    3 rashers bacon (optional)
    1 c self-rising flour (1 c SR flour = 1 c flour plus 1 tsp baking soda)
    5 eggs
    1 lg onion
    1 c grated cheese
    ½ c oil
    Salt, Pepper

    Grate zucchini (or whatever else is around, carrot, etc), finely chop onion, bacon (we never use). Mix all ingredients. Pour in well-greased 9×13 pan and bake at 350 for 30-40 minutes until brown.
    Good hot or cold
    If you have fresh herbs, throw some in.
